Slowly simmered bacon, onions, maple syrup, brown sugar, vinegar and strong brewed coffee meld together into a smoky-sweet condiment that complements almost anything.
Ingredients
1½ pounds Bacon, slice lengthwise into 1 inch squares, fried until fat is rendered and browned.2 medium yellow onions, diced3 large cloves garlic, peeled and rough chopped½ cup cider vinegar¼ cup maple syrup¾ cups strong brewed coffee½ - 1 teaspoon red pepper flakes (optional)
Instructions
In a large skillet, cook bacon on medium heat until fat is rendered and bacon is browned. Using a slotted spoon, transfer browned bacon to a plate lined with paper towels to drain. Pour off all but 1-2 tablespoons of the bacon fat from the frying pan. Place pan back over medium heat, add the onions and garlic, saute until onions are slightly softened, about 5- minutes. Add coffee, vinegar, maple syrup, brown sugar, red pepper flakes and bring to a boil. Add the bacon and stir to coat. Transfer mixture to your slow-cooker and cook on high uncovered for 3 ½ - 4 hours. Transfer to a food processor or use an immersion blender until coarsely chopped. Allow to cool to room temp, refrigerate in an airtight container, overnight if possible (Minimum 4 hours). Serve with crackers or use as a condiment.
